Mr. Imai is the owner of Higashiyama Wakon in the Higashi Chaya District of Kanazawa; he became independent and opened it in 2018. He is one of Kanazawa's notable young chefs. His cooking introduces unexpected choices and combinations of ingredients and features delicate presentation. Each dish is carefully constructed to be delicious, and with every bite the sense of wonder grows. His work shows techniques that bring out the ingredients' natural flavors to the fullest and a deep passion for cooking.
