A seasonal dish showcasing local ingredients

It features inventive Japanese cuisine made with fresh local ingredients from Kanazawa. In spring there are appetizers using butterbur sprouts, in summer a pureed snap pea soup, and in autumn dishes made with fresh turnips and shiitake mushrooms. In particular, many dishes draw out the umami of aged ingredients; each plate is artistic and richly flavorful.
